
My new and improved recipe for gluten free seeded soda bread – it’s so good, you’ll want to make it every week! I’ve also uploaded a video of me making this to my Instagram and Youtube channel if you fancy checking it out!
Ingredients:-
- 350g gluten free brown bread flour
- 2 teaspoons xanthum gum
- 2 teaspoons bicarbonate of soda
- 2 teaspoons cream of tartar
- 1 teaspoon salt
- 2 tablespoons golden caster sugar
- 4 tablespoons of mixed seeds (I like a mix of sunflower, pumpkin, hemp and linseeds but you can mix and match to your taste)
- 100ml sparkling water
- 300ml of buttermilk (if you’re vegan you can turn nut milk into buttermilk by stirring 2 tbsp lemon juice or apple cider vinegar into 1 cup of nut milk)
- 1 egg beaten (if you’re vegan you can use vegetable oil)
Method:-
- Preheat oven to 220c and grease a baking tray
- Put the gluten free brown bread flour, xanthum gum, bicarbonate of soda, cream of tartar, salt, golden caster sugar and mixed seeds in a bowl and stir together
- Mix in the water and buttermilk and form a soft dough
- Turn it out onto a heavily floured surface and knead gently to ensure everything is well mixed
- Form into a round and place on the baking tray
- Brush the top with beaten egg wash and then make slashes across the top of the loaf.
- Bake in the oven for 45 minutes
- The top should be lovely and brown and the loaf should sound hollow when tapped on the bottom
- Allow to cool on a wire rack and then slice and enjoy!! 💛
