Gluten Free Breakfast Waffles

Breakfast needs never to be boring again! Once you’ve made the basic waffle recipe you can jazz it up with whatever toppings you choose. Having said that these always go down well in my house no matter what time of day it is.

  • 200g gluten free all purpose plain flour
  • 1 and a 1/2 tablespoons granulated sugar
  • 1/2 tablespoon gluten free baking powder
  • 1/2 teaspoon gluten free bicarbonate soda
  • 1/4 teaspoon salt
  • 200ml almond milk
  • 45ml vegetable oil
  • 1 large egg
  • Spray oil (to ensure the mixture doesn’t stick to the waffle maker plates)

Method (using the Cuisinart waffle maker):-

  1. Place all the ingredients in a large bowl and mix until smooth
  2. Leave the batter to rest for at least 10 minutes
  3. Turn your waffle maker on and leave until warmed up
  4. Spray a little oil onto the waffle maker plates
  5. Pour a ladleful of mixture into the centre of each grid and close the lid and lock the handle
  6. Leave for 5 minutes, carefully open the lid and remove from the waffle maker
  7. Repeat with the remaining batter – it should make 4 good sized waffles
  8. Serve with your chosen toppings – I like mine with blueberries, banana, kiwi, coconut cream and cinnamon
